Sourced from the Gedeb region in southern Ethiopia, this coffee is produced by a community of small farmers whose cherries are carefully harvested and processed at the Banko Gotiti station, renowned for the quality of its microlots.
This batch has undergone carbonic maceration, a technique inspired by the world of winemaking: whole cherries ferment in a CO₂-saturated tank, triggering a slow and controlled fermentation within the fruit itself. This process intensifies the aromas and brings great complexity to the cup.
The result is a fruity, fermented, and expressive coffee, driven by notes of black cherry, tropical fruits, and a vibrant touch of bergamot.
