This lot comes from Finca Los Alpes in Antioquia, managed by Felipe Henao. Situated at high altitude (~2,100 m), the farm benefits from cool mountain microclimates that slow cherry maturation. This encourages denser bean development and deeper complexity — ideal conditions for producing expressive Chiroso with gentle acidity and uplifting aromatics.
Pastel Hour uses a traditional washed process, where ripe cherries are carefully hand‑sorted upon arrival at the mill. After depulping, the beans undergo controlled fermentation and multiple clean water rinses to remove mucilage. Once washed, the coffee is dried with precision on raised beds, preserving clarity, brightness, and aromatic detail that shine in a filter brew.
In the cup, Pastel Hour is light, refreshing, and aromatic. Expect bright herbal notes of verbena 🍃, supported by soft floral 🌼 sweetness and a gentle finishing touch of fresh mint 🌿. The overall profile is clean and refined, with a silky body and nuanced layers that make it perfect for pour‑over, V60, Chemex, or other filter methods.
