Nyeri County lies in mountainous Central Kenya and is a prime coffee growing area. Plants thrive on its  red, volcanic soil and the cherries deliver fruity cup profiles that the world has come to associate with Kenyan coffee. This Ichuga AA lot was harvested by smallholder farmers at 1700 masl. They selectively pick ripe cherries and deliver them to the nearby Ichuga Washing Station where they’re (collected and carefully sorted before) further processed. The coffee is depulped, fermented and washed with clean water to remove any remaining mucilage. Parchment is thereupon spread out on raised beds whilst raked frequently to ensure even drying. Both at the hottest time of day and overnight, parchment is fully covered to prevent damage. Drying takes approximately two weeks, depending on the weather circumstances.
