This coffee is the result of an advanced Natural process combining controlled fermentation and innovative techniques.
Cherries, harvested at high maturity (24–28 Brix), are sorted by flotation and then fermented in several stages: cherry oxidation, anaerobic fermentation at low temperature, then submerged fermentation with recirculation of cherry juice. A final thermal shock stabilizes and fixes the aromatic profile. Drying, carried out under dehumidification with controlled rest phases, ensures an optimal balance.
This advanced process gives a precise, silky and intensely aromatic coffee, with notes of apricot, strawberry and cherry.
