The River Flow protocol presented here by Elto Elora is designed to accompany the grain, working the fermentation with precision. For our RF8 Washed batch, the cherries naturally ferment in airtight bags in a river, then follow a classic washing process and being dried.

In cup, the opening is thin and bright. Bergamot immediately brings a floral and delicate dimension. Then the yuzu comes to take over, with a lively and precise acidity that stretches the cup. Finally, black tea brings depth structuring the whole without weighing it down.
