This exclusive batch of Finca Zarza is grown in the famous Pitalito region in Colombia by the brothers Jhonatan and Johan Gasca, it comes from the rare and prestigious Wush Wush variety.
This coffee pushes the limits of fermentation with its unique experimental natural process. The cherries first undergo an anaerobic fermentation of 76 hours, followed by a short oxidation of 12 hours in the open air, before being immersed in water at 60°C for 24 hours for a striking thermal shock that fixes the aromas, to finally be dried slowly for about ten days.
