This coffee sings soprano notes of articulated citrus and berries. There's a range of fruit and florality that is so pleasantly captivating. This lot has a firm acidity and super clean structure to the mouthfeel. Chelbessa has a rounded tea-like attribute that fills the pallet. Waves of candied fruit and florals flow in the aftertaste. This lot consists of the Ethiopian Heirloom varieties Korume and Wolisho and others we simply have not been able to track, all of which inherently an Ethiopian Landrace. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOnce the cherries arrive at the Chelbesa Washing Station, they are placed in water for sorting and removing of floaters. The cherries are then de-pulped and left to dry ferment in tanks for 2-3 days, to be later washed and placed to dry on raised beds. His coffee is a distinguished lot among so many wonderful coffees from Urrao this year. This coffee is sweet upfront and the finish is honeyed with a viscid complexion. Notes of plum, black cherry, orangey-citrus and stone fruit come to mind when sipping on this coffee. Brewed as espresso or paired with milk, the compliments of Alvaro's Chiroso cherries are transformed into notes of caramel and spring florals.\u003c\/p\u003e\n\u003cp\u003eAlvaro comes from a family with deep roots in coffee farming and cattle ranching. After many years in coffee, he is now beginning to carve his own path in specialty coffee. Since we started working together in 2025, his discipline, competition experience, and commitment to quality have made us excited for what his future harvests will bring. Although he is still in the early stages of his journey in specialty coffee, his commitment and talent have already stood out, earning him a finalist position in regional coffee competitions. His daughter often accompanies him in the daily work on the farm, making coffee a shared family journey.\u003c\/p\u003e\n\u003cp\u003eThe cherries are harvested, hand selected for ripeness, and floated to remove any unripe beans or defects before being immediately de-pulped. He then ferments the coffee seeds in dry and open tanks for 4 days, thereafter washing them. The coffee in-parchment was dried on sun-bed driers for about 20 days and kept in GrainPro bags for another 20 days before dry milling.\u003c\/p\u003e\n\u003cp\u003eChiroso is a relatively new variety in the world of specialty coffee. This genus has been identified as a Landrace variety from the motherland - Ethiopia-Yemen. No one is quite sure how this variety came to be in Antioquia, Colombia but it has now changed entire landscapes and perspectives on how many coffee lovers perceive what coffee can taste like. Spanning nearly 11,000 square miles. Burundi is home to almost 13 million people, making it one of the most densely populated countries on the continent. Ngozi is a new municipality and region for us Burundi, just south of Kayanza, these coffees are rich and vibrant. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAt the Nkanda washing station, the coffee undergoes a meticulous double-fermentation process: 12 hours of wet fermentation followed by another 12 hours in cement tanks. With 280 acres dedicated to forest, dams, marshland, roads, and labor housing. The land features deep, well-drained red volcanic soils, specifically Nitisols and Andosols, which are highly fertile and provide ideal conditions for coffee production. The climate is generally cool, with particularly cold and wet periods occurring between May and July. The natural forest ecosystem on the estate remains well-preserved, supporting a rich diversity of flora and fauna across both terrestrial and aquatic habitats. This coffee was favored for optimal Kenya cultivation in the 1930's. SL-34 is highly regarded for it's cup quality and nuance.
