At the farm called Finca Nejapa, there is a lot called Roma that Drop Coffee buys exclusively. On this farm, Gloria and Luis have found a natural mutation of Bourbon that excites all of us a lot. And now you can get to try it for the very first time, besides smaller lots that have been going to Cup of Excellence the previous year.
The Elefante coffee cherry is bigger than the other varietals, hence the name, Elefante. It also produces three times more mucilage compared to a Bourbon. The fruit looks much like a Pacamara and the seed (bean) like a Bourbon. In flavour, it is more bright, floral, and delicate. We have a small lot of natural and a small lot of washed Elefante. This one will be more bright and clean, yet round and smooth from the El Salvadorian terroir.
